This low carb, keto broccoli and cheddar crustless quiche is simple, filling and perfect for brunch. It can be made ahead of time and can either be served hot or cold!

Never Fussed…

I was never fussed about quiche. It was one of those dishes that I could easily pass on. However, now my life is all about protein and being low carb, that I find myself really craving quiche on quite a frequent basis (which is a surprise for us all!)

As a whole, quiches are super easy to make. Now, eliminate the crust…and it’s even EASIER. Yay!

It’s all about that Broccoli…

This quiche is all about that yummy, garlic-infused, flavorful broccoli. I love to sauté most things in butter, but this can be substituted for your preferred cooking oil.
Note: I have made this dish with sautéed, raw and roasted broccoli, and sautéing it by far the best method!

The Perks of This Dish…

Yes, this quiche has so many things going for it, like the facts that it:

  • Can be made ahead of time – I sometimes make this the night before, for an easy brunch the following day.
  • Is so versatile – you really can add whatever protein, veggies and cheese you want to it and it will turn out delicious.
  • Tastes good hot or cold. I personally prefer mine on the warmer side, so if it’s cooled down too much for my liking, I simply pop my wedge in the microwave for 30-45 seconds.

Ingredients

  • 1 tbsp butter
  • 1 tsp garlic minced
  • 3 cups broccoli cut into small florets
  • 1 tsp salt divided
  • 6 eggs
  • 3/4 cup unsweetened almond milk (or your preferred milk)
  • 1/4 tsp back pepper
  • 1 cup shredded cheddar cheese divided

Instructions

  • Preheat the oven 325ºF and grease a 9-inch pie dish.
  • Melt the butter in a sallow frying pan over a medium-high heat. Add the garlic, broccoli and 1/2 tsp salt, and sauté for 4-5 minutes, stirring occasionally. Pour into the greased 9” pie dish.
  • In a large bowl, whisk the eggs, cream, milk, 1/2 cup of cheddar cheese, remaining 1/2 tsp salt and pepper. Pour on top of the broccoli. Sprinkle the remaining 1/2 cup cheddar cheese on top and bake for 50-55 minutes, until the centre is no longer jiggly. Take out the oven and allow to cool for 10 minutes.
  • Slice, serve and enjoy!
