These Buttered bread rolls store nicely in an air-tight container, in the refrigerator, for up to 7 days.

  • 170g (1½ cups) mozzarella cheese, grated
  • 60g (¼ cup/ 2oz) cream cheese
  • 3 eggs, room temperature
  • 175g (1¾ cups) almond flour
  • 14g (2 tbsp) flaxseed meal
  • 2 tsp baking powder
  • ¼ tsp salt
  • 30g (2 tbsp) unsalted butter, melted


  • Preheat oven to 400ºF/ 200ºC and line a baking tray with parchment paper.
  • In a microwavable bowl, melt the mozzarella and cream cheese together for 1 minute, and stir to combine.  If it needs longer to melt, microwave in 30-seconds increments
  • Mix in the eggs, one at a time.
  • Add the almond flour, golden flaxseed meal, baking powder and salt.
  • Dampen your hands (to prevent the dough sticking to them), and combine the dough really well. 
  • Divide the dough in 6 equal portions, and roll each one into balls.
  • Place them on the lined baking tray, spaced apart and bake them for 12 minutes. 
  • Brush the tops with melted butter, place back in the oven for 2 minutes, until lightly golden brown on top. 
  • Cool for 5-10 minutes.
  • Serve & Enjoy!
