Bread Addict…

Is there such a thing as being a bread addict? Because if there is, then I would say my husband and I definitely used to be bread addicts! Before starting this keto lifestyle, we were eating at least a couple of loaves of bread a week (and that’s not including other types of bread we ate to accompany our main dishes). So, when we went keto, we REALLY missed bread!

In order to succeed on this keto diet, I knew I needed to find a good keto-friendly bread recipe. So after 6 months (yes, that’s right… 6 months!) I have FINALLY mastered the perfect keto bread rolls. Omg, it has been so much harder than I anticipated!  I have tried a crazy amount of bread recipes and I was close on giving up several times, but then, I played around with the ingredients AGAIN and thank goodness I did! They turned out to be the best keto bread rolls ever!

Flaxseed Meal…

Now, before I move onto how you make these delicious rolls, let me quickly tell you about the importance of Flaxseed Meal. Flaxseed meal is a crucial ingredient that makes these rolls more “bread-like”. I have tried this recipe with and without this ingredient, and I honestly tell you guys that it is infinitely better with flaxseed meal…so don’t omit or substitute it! Trust me!

Make & Bake…

To make these bread rolls, melt both the mozzarella and cream cheese together in a microwavable bowl. I generally find one minute in the microwave does the trick, but if you feel they did a bit longer, continue to microwave in 15 second increments, until they can be mixed together easily.  Then, add the eggs, one at a time and mix well. Add the almond flour, flaxseed meal, baking powder and salt, and mix together until VERY well combined.

Before forming your rolls, run your hands under the tap for a couple of seconds to get them wet. This will prevent the dough sticking to your hands and fingers…you’re welcome! Then form six good sized dinner rolls out of the dough mixture and bake them for 14 minutes.

Brush each roll with melted butter (yum!) and return them back into the oven for a further 1-2 minutes, until they are lightly browned on top.

Take them out the oven and let them sit on the baking sheet for 10 minutes, before transferring them to a cooling rack to cool completely.

Storing Instructions…

These buttered bread rolls store nicely in an air-tight container in the fridge, for 7 days. However, if you are not a massive bread-goer (unlike me and my family), then they will store well in the freezer for up to 2 months.

Ingredients

  • 1 1/2 cups mozzarella cheese grated
  • 3 oz cream cheese
  • 3 eggs
  • 1 3/4 cups almond flour
  • 2 tbsp flaxseed meal
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp butter melted

Instructions

  • Preheat oven to 400ºF and line a baking sheet.
  • Melt both the mozzarella and cream cheese together in a microwavable bowl for 1 minute and mix them together. If you feel they need a bit longer, microwave in increments of 15 seconds. 
  • Whisk in the eggs, one at a time, and mix well.
  • Add the almond flour, flaxseed meal, baking powder and salt. Stir all the ingredients until very well combined.
  • With sightly dampened hands (so your dough doesn’t all stick to your fingers) divide and form the mixture into 6 rolls. Place the rolls on a lined baking sheet and bake them for 14 minutes.
  • Brush the tops and sides on the rolls with melted butter, and return them back to the oven for another 1-2 minutes, until the top of each bread roll is lightly golden brown. 
  • Take them out of the oven and let them sit on the baking sheet for 10 minutes, before transferring them to a cooling rack to cool completely. 

Notes

Always have some bread rolls on hand by doubling the recipe and freezing some rolls! Just make sure they have cooled down completely, before transferring them to an air-tight container and placing them in the freezer. To thaw, either leave them out to reach room temperature, or place them in the microwave in 20-second increments!
