Cheddar & Herb Chaffle (Keto | Low Carb)
This cheddar and herb chaffle (cheesy waffle) is one of my favourite keto bread substitutes. Made with just egg, cheese, almond flour, italian seasoning and baking powder, this recipe comes together quickly and easily!
What Is A Chaffle?
A chaffle is essentially a cheesy waffle.
I am sure most of you have seen all the hundreds of chaffle recipes out there, and everyone seems to have their favourite. So, I couldn’t help myself experimenting with chaffles over the last few weeks (and have eaten far too many to count). While they are all mighty tasty, this one has to be my personal favourite.
Mozzarella Vs. Cheddar…
Yep, I’ve eaten chaffles with both. Firstly mozzarella, then cheddar, then a combination of both of them together. And I have to say, for my own taste buds, simply using just cheddar cheese is the best. I have used mild and a strong/ mature cheddar, and the strong (mature) cheddar cheese is infinitely tastier!
Is The Almond Flour Necessary?
As I mentioned above, I have tried numerous chaffle recipes and really do believe that the almond flour gives these babies a more “waffle” taste and texture. If you omit it the flour from this recipe, it will still taste good…buta bit more on the eggy side.
What Type Of Waffle Iron?
Well, I have a belgium waffle iron/maker, which I adore. But you can honestly use any waffle iron you have…some people swear by the mini ones (but I haven’t invested in one of those yet).
If you like cheese (like myself) and are craving something super-duper cheesy, I highly recommend sprinkling a little extra cheese on top of the batter halfway through cooking it. It results in a super crispy layer and is simply chesse-y-licious.
How Long Does It Take to make?
Minutes. Yep, that’s right. It will be ready faster than any bread recipe out there.
A quick whisk of the ingredients (one minute max), and it roughly 3-4 minutes to cook…et voilá!
Some people like sweet, some like savoury…I like both!
I love adding whatever meat and veg I have on hand (which is usually bacon and avocado), and to be honest pretty much every sauce works with them too. Don’t believe me, just try them for yourself 🙂

Cheddar & Herb Chaffle
- 2 eggs
- 113g (1 cup) mature cheddar cheese grated
- 2 tbsp almond flour
- 1 tsp Italian Herb Seasoning
- 1/4 tsp baking powder
- 1/4 tsp salt
- Preheat a waffle iron and lightly spray it cooking spray.
- Whisk the eggs, cheese, Italian herb seasoning, baking powder and salt together, until well combined.
- Pour half the batter into the waffle maker, and cook for 3-4 minutes, until lightly browned and cooked through.
- Carefully remove the waffle, and repeat with the remaining batter.
- Allow them to cool for 2 minutes (to get crispier).
- Serve & Enjoy!
