The Ultimate Keto Vegetarian Appetizer…

Back in the day, when I was in my mid-late teens, I was a hardcore vegetarian (I know, I bet you couldn’t believe that now with all my daily intake of meat!) However, whenever I saw stuffed mushrooms as an appetizer or starter on the menu, I would order them every single time! One of the best stuffed mushrooms I ever had were baked with SO much cheese, that I thought about trying to re-create them!

How To Make These Little Bundles of Yumminess…

These low carb, bite-sized beauties are simple and straight-forward to make. Simply:

  • Preheat the oven to 375ºF and line a baking sheet with aluminum foil.
  • Clean the mushrooms with a damp paper towel, to remove any dirt.
  • Remove the stems by pushing from side to side, until they snap off (my kids LOVE this “job”).
  • Finely chop the stems and set aside.
  • Place the mushroom caps on a lined baking sheet and brush with butter.
  • Fry the chopped mushroom stems and garlic in butter. Stir frequently for 4-5 minutes, then add in the cream cheese, parmesan cheese, chives, basil, salt and black pepper.
  • Fill each mushroom cap with the cream cheese mixture and sprinkle extra parmesan cheese over all of them.
  • Bake for 20-25 minutes, until the mushrooms are soft and the cheese has melted.

Each bite of these mushrooms is bursting with rich and delicious flavors, which makes me say “mmmmm!” Each of the following ingredients is vital for these baked stuffed mushrooms to turn out perfectly!

  • Whole Mushrooms – Choose mushrooms that are the same size. Preferably go on the larger side, since they are easier to stuff!
  • Butter – Everything tastes better with butter…especially mushrooms!
  • Cream cheese – With it’s silky properties, cream cheese gives the best creamy flavor to these stuffed mushrooms!
  • Parmesan cheese – This ingredient adds a stronger cheesy flavor and also makes the best crispy layer for the top!
  • Chives – Chives are not one of the common herbs out there, but they pair perfectly with cheese and only have 1g net carbs per 100g!
  • Garlic, basil, salt and pepper – All these ingredients are necessary to make each stuffed mushroom wonderfully delicious!

Ingredients

  • 12 whole mushrooms
  • 2 tbsp unsalted butter
  • 1 tsp garlic minced
  • 6 oz cream cheese softened
  • 1/4 cup parmesan cheese grated (plus extra for sprinkling on top)
  • 1 tbsp chives finely chopped
  • 1 tsp basil dried
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Preheat oven to 375ºF and line a baking sheet with aluminum foil. 
  • Clean the mushrooms and remove the stems (scroll up if you need help with this bit.)
  • Finely chop the mushroom stems and set aside. 
  • Place the mushroom caps on a lined baking sheet and brush with 1 tbsp melted butter.
  • In a small frying pan, over a medium heat, fry the mushroom stems and garlic in the remaining 1 tbsp butter. Stir frequently for 4-5 minutes, until softened.
  • Turn off the heat and stir in the cream cheese, parmesan cheese, chives, basil, salt and black pepper. 
  • Fill each mushroom cap with the cream cheese mixture and sprinkle extra parmesan cheese over all of them.
  • Bake for 20-25 minutes, until the mushrooms are soft and the cheese has melted. 
  • Serve & Enjoy!

Notes

For an extra crispy top layer, place them under the broiler for 1-2 minutes.
Optional: Garnish with finely chopped green onions!
