Simple Yet Exciting…

We are CRAZY for salads in this house! It is a very rare occasion if we go a day without some kind of salad for lunch or dinner! Even my 4-year old is OBSESSED with eating and creating salads!

However, most of the salads I make are lettuce-based, which makes this zoodle salad ever-so exciting!

Classic Chicken Club…

There’s something so perfect about chicken, bacon, tomatoes and mayonnaise together! It is a classic sandwich and salad combination for a very good reason…it’s DELICIOUS!

Main Components…

  • Zucchins – I grew my own zucchinis this summer and they are beautiful! I had two fairly large zucchinis that I used for this salad, which were equivalent to three medium-sized zucchinis.
  • Bacon – I usually recommend precooked bacon. It is easy, fast and great for quickly adding it to most recipes…because everything is better with bacon, right?! However, if you are going to cook raw bacon, then I suggest cooking it whilst the chicken is roasting in the oven.
  • Chicken Breasts – Cooking chicken breasts is easy and relatively quick. All you have to do is roast them in the oven for 20-25 minutes, until they are cooked through (the juices should run clear). However, if you want to make this salad even quicker, buy precooked chicken and it will be ready in half the time!
  • Cherry Tomatoes – Another vegetable that I have grown in my garden this year…cherry tomatoes! They are the BEST and my whole family are obsessed with them! If you prefer other tomatoes, like Campari tomatoes, feel free to substitute them for an equally great tasting meal!

Homemade Dressing…

Ok, I’m not going to lie to y’all…I do buy pre-made dressings for the times I am feeling especially lazy. I know I shouldn’t because salad dressings are ridiculously easy to make!

This simple creamy dressing is made in less than 5 minutes and is extremely fresh and flavorful! All you need is mayonnaise, olive oil, lemon juice, dijon mustard, salt and pepper and it will be made before you know it!


Having a good spirializer on hand is a necessity in my house! I use mine all the time and absolutely love it. Yes, you can buy already spirialzed zoodles, but it is easy and more cost-efficient to spirialize your own.

Chicken Club Zoodle Salad

Zoodle Salad:

  • 2 large or 3 medium zucchinis spirialized
  • 2 chicken breasts
  • 6 slices bacon cooked and crumbled
  • 3/4 cup cherry tomatoes chopped
  • 1 tbsp olive oil
  • 1/2 tsp salt


  • 1/4 cup mayonnaise
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper


  • Preheat the oven to 425°F.
  • Place the chicken breasts in a baking dish, drizzle with the olive oil and sprinkle with the salt. Roast for 20-25 minutes, until cooked through (the juices should run clear). If you’re bacon is not precooked, cook it up now, whilst the chicken is roasting.
  • Spirialize the zucchinis and place them in a large salad bowl.
  • Add the tomatoes, bacon and chicken to the salad.
  • Make the dressing: Mix the mayonnaise, olive oil, lemon juice, mustard, salt and pepper together, until well combined.
  • Pour the dressing over the salad and toss well.
  • Serve & Enjoy!
