This low carb chicken club zoodle salad is fresh and exciting. Zucchini noodles, bacon, chicken and tomatoes, tossed in a homemade 5-minute dressing, is so easy to make and hits the spot every time!

Simple Yet Exciting…

We are CRAZY for salads! It is very rare for us to go a day without eating some kind of salad for lunch or dinner. However, our salads are usually lettuce-based, which gets kinda boring sometimes! So, to jazz things up around here, I like using brussels sprouts, cabbage or zoodles instead. Zoodles are awesome! Even though they are fantastic cooked (like in my Zoodle Bolognese Bake or Chicken Pesto Zoodle Bake), they are also delicious raw! They make the best base for salads and they only have 5g net carbs per one cup.

Perfect Combination…

  • Zucchins – The only advice I would give you guys when it comes to zoodles, is to avoid the frozen ones. I find they retain way too much water and never work out well – for me anyway! So, in my opinion, it’s best to always go for the fresh! You can either spiralize them yourself or buy them ready to go.
  • Bacon – I’m lazy and simply love precooked bacon! I always have some in the fridge, for a fast & easy snack. However, if you only have raw bacon on hand…that’s completely fine! Just fry it or bake it, whilst the chicken is roasting in the oven.
  • Chicken Breasts – Cooking chicken breasts is easy! Simply roast them in the oven for 20-25 minutes, until they are cooked through, and the juices run clear. However, if you want to cut down the prep time, buy precooked chicken instead!
  • TomatoesJust so you guys are in the know...cherry tomatoes have 4g net carbs per cup.

Homemade Dressing…

I confess…I am a sucker for store bought salad dressings! However, that being said, I make this dressing a lot! It is quick (like 5 minutes), easy and only has four ingredients (plus a bit of salt & pepper):

  1. MayonnaiseHigh fat, low carb, creamy, silky and delicious! I LOVE this stuff and eat it almost daily!
  2. Olive Oil – This helps thin it out slightly.
  3. Lemon Juice – It’s perfectly acceptable to use bottled lemon juice, just note that fresh lemon juice tastes infinitely better!
  4. Dijon MustardZero carbs and perfect for added flavor.

Ingredients

Zoodle Salad:

  • 4 small-medium zucchinis spirialized
  • 2 chicken breasts cooked
  • 6 slices bacon cooked and crumbled
  • 3/4 cup tomatoes chopped
  • 1 tbsp olive oil
  • 1/2 tsp salt

Dressing:

  • 1/4 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • If your chicken is not already cooked, bake it for 20-25 minutes at 425ºF, until the juice run clear. Rest for a few minutes before slicing.
  • Place zoodles in a large salad bowl.
  • Add the tomatoes, bacon and chicken to the salad.
  • Make the dressing: Mix the mayonnaise, olive oil, lemon juice, mustard, salt and pepper together, until well combined.
  • Pour the dressing over the salad and toss well.
  • Serve & Enjoy!
