Coconut Cauliflower Rice (Low Carb | Paleo | Vegan)

This low carb, keto coconut cauliflower rice is the perfect side dish. It is easy to make, ready in under 15 minutes and is extremely creamy and delicious!

My Relationship with Cauliflower Rice…

It is fair to say that I was not a big fan of cauliflower rice when I first tried it. However, after a few weeks of experimenting with it, I found myself raving about it and recommending it to all my friends and family!

I have tried hundreds of cauliflower rice recipes, and I have to say, that this Coconut Cauliflower Rice is one of my favorites. Last night, I paired it with this Sheet Pan Jamaican Jerk Chicken and Vegetables and it was YUM YUM YUMMY!

How To Make Cauliflower Rice…

There are two ways of making cauliflower “rice”:

  1. Use a cheese grater – This is good if you are new to cooking and do not have a decent food processor. However, this way requires a lot more effort and time, which is why I have only done it this way once before.
  2. Use a food processor – I love my Ninja, but any food processor should work well. All you have to do is pulse cauliflower florets several times, until it resembles “rice”. If I am going to make it myself (as opposed to buying it pre-made) then this really does require very little effort and is ready in about 1 minute!

Even though, both these options are good…unless cauliflower heads are on a crazy-good sale, I buy my cauliflower rice already riced, prepared and ready to go!

Quick & Easy Side Dish…

This creamy coconut cauliflower rice is the perfect side dish to a curry or Sheet-Pan Dinner. It is ready in 15 minutes, so simple to make and incredibly delicious!

To make this splendid side, simply:

  • Heat the coconut oil and garlic over a medium-high heat for 1 minute..
  • Add the cauliflower rice and cook for about 5 minutes. The “rice” should be more tender at this point, but not fully cooked through.
  • Pour in the coconut milk and add the salt, and simmer on a low for a further 5-7 minutes until more tender and it reaches your desired texture.
  • This next step is optional, but I highly recommend that after it has been taken off the heat, mix in cilantro and squeeze of lime.

Ingredients

  • 4 cups cauliflower rice
  • 1 tbsp coconut oil
  • 1 tsp garlic minced
  • 1 can coconut milk
  • 1/2 tsp salt
  • 1-2 tbsp cilantro finely chopped
  • Optional: squeeze of lime

Instructions

  • Heat the coconut oil in a shallow frying pan. Add the garlic and sauté for 1 minute.
  • Add the cauliflower rice and cook on a medium heat for 5 minutes, stirring frequently.
  • Pour in the creamy part of coconut milk (leaving most of the water in the can) and simmer over a low heat for a further 5-7 minutes, until the liquid has evaporated.
  • Take off the heat and stir in the cilantro. If you want to add a slightly zesty flavor, also stir in a squeeze of lime juice.
  • Serve & Enjoy!
