Creamy Chicken Florentine Casserole

Let’s Raid The Fridge…

A few days ago, I was not in the mood to go to the supermarket with my 4- & 2-year old (as I am sure many of you can relate to), so I decided to raid the fridge and freezer to see what I could muster up. Well, thanks to Costco, I had all the ingredients to make this delicious, comforting, creamy chicken Florentine casserole.

Classic Casserole Components…

  • Chicken breasts – Yes, chicken breasts are my personal favorite choice but you can substitute for chicken thighs, or even shrimp. If you go down the shrimp route, just cook them until pink, then top with the creamy sauce and serve with your favorite sides.
  • Spinach – I have read numerous recipes using frozen spinach, but I love fresh spinach, and will always opt for fresh over frozen. Another great substitution would be power greens, which is a mix of spinach, chard and baby kale.
  • Cheese – This dish is perfectly cheesy. I love the combination of mozzarella, cream cheese and parmesan…not just because they are the three of the most popular cheeses in my house. However, I have heard that fontina cheese is a wonderful cheese to use in a Chicken Florentine Casserole recipe, as well as feta.

Creamy Chicken Florentine Casserole

This low-carb, high fat casserole is delicious, hearty and ever-so comforting! Chicken breasts in a creamy spinach and mushroom sauce, topped with bacon and mozzarella cheese is a perfect meal for a busy weeknight!

  • 4 chicken breasts
  • 2 tbsp butter
  • 1 tsp garlic
  • 1 cup mushrooms chopped
  • 3 cups spinach fresh
  • 2 oz cream cheese
  • 3/4 cup heavy cream
  • 1 tbsp lemon juice
  • 1/4 cup parmesan cheese
  • 6 slices bacon cooked
  • 1 cup mozzarella cheese shredded


  • Preheat oven to 400°F.
  • Place chicken breasts in a casserole dish for 20 minutes, until cooked through and juices run clear.
  • In a medium saucepan, heat butter and garlic for 1 minute. Add mushrooms and sauté for 2 minutes, until softened. Add spinach and cook until wilted.
  • Add cream cheese, heavy cream, lemon juice and parmesan. Cook until cream cheese has fully melted.
  • Pour creamy sauce over the cooked chicken breasts.
  • Crumble the cooked bacon over the top.
  • Sprinkle the mozzarella over the top and cook for 15-20 minutes, until mozzarella cheese has melted and the casserole is slightly browned on top. If you want to brown the top more, place under the broil for 1-2 minutes.
  • Serve & enjoy!
