Crispy Kale Caesar Salad

This fresh and crunchy crispy kale caesar salad is loaded with roasted kale, garlic-herb croutons, parmesan cheese and a homemade Caesar dressing.

Crave-Worthy…

I could eat salad every single daymultiple times a day! But, I’m not into boring salads, I’m talking about everything but the kitchen sink salads. These are salads where you throw all sorts of wonderful ingredients together to create a tasty, flavorful salad that excites the taste buds!

A couple of weeks ago, I was making an everything salad for lunch and decided to roast some kale to make kale chips as a side. As I had both kale chips and salad on my plate, I had no choice but to try them together. So I did, and it was fantastic! Both my husband and I agreed that adding kale chips to any salad is an amazing way to jazz up your everyday salads!

Plain on Purpose…

I purposely made this salad as plain as I could and didn’t throw in all the extras, like other vegetables, meat or dairy. I stripped it back so you can be the chef! The only ingredients that are essential are:

  • Mixed Leaves / Lettuce / Kale – your favorite salad base.
  • Kale Chips – If you haven’t already tried them…DO SO…NOW!! They’re amazing and one of my family’s favorite low carb snacks!
  • Garlic Herb Croutons – This keto lifestyle does not mean we have to miss out on croutons on salads! These delicious croutons are seriously easy to make! Cut up a few slices of Low Carb Bread Loaf (or your favorite keto bread) into 3/4″ cubes. Melt the butter in a small frying pan over a medium-high heat, then add the bread cubes, garlic, parsley and salt. Stir well and evenly coat each bread cube with the rest of the ingredients. Fry for 3-4 minutes, until crispy on the outside. Serve and enjoy!
  • Caesar Dressing – Low carb AND full of fat = favorite salad dressing ever! Obviously making your own means you are in control of the ingredients, but some store-bought ones are great as well. Just read the ingredients!

Ingredients

  • 3-4 cups lettuce/ mixed leaves/ raw kale finally sliced
  • 2 tbsp parmesan cheese grated

Crispy Kale:

  • 1 bunch kale trimmed and chopped
  • 2 tbsp olive oil
  • 3/4-1 tsp salt

Caesar Dressing:

  • 1/4 cup mayonnaise
  • 1/4 cup olive oil
  • 3 tbsp parmesan cheese grated
  • 2 tsp Worcestershire sauce
  • 1 tbsp lemon juice
  • 1 tsp garlic minced
  • 1 tsp Dijon mustard
  • Sprinkle salt

Garlic Herb Croutons:

  • 1 cup Low Carb Bread Loaf cubed (see notes for recipe)
  • 1 tbsp butter
  • 1/2 tsp garlic
  • 1/2 tsp parsley
  • 1/2 tsp salt

Instructions

Kale Chips:

  • Preheat the oven to 300ºF.
  • In a mixing bowl, add the kale, olive oil and salt. Mix together and evenly coat the kale with the olive oil and salt (I like the use my hands for this part to ensure it’s evenly coated).
  • Transfer the kale to a lined baking sheet and bake for 15-20 minutes, turning halfway, until kale turns crispy.
  • Take out of the oven and allow to cool on the baking sheet for 10 minutes.

Caesar Dressing:

  • In a small bowl, whisk the lemon juice, garlic, Dijon mustard and Worcestershire sauce together.
  • Slowly pour in the oil and continue to whisk.
  • Whisk in the parmesan cheese, mayonnaise, salt and pepper, until smooth.
  • Side note: This makes more than enough dressing so only use your desired amount (and yes- it stores well in the refrigerator!)

Garlic Herb Croutons:

  • Cut up a few slices of Low Carb Bread Loaf into 3/4" cubes.
  • Melt the butter in a small frying pan over a medium-high heat. Add the bread cubes, garlic, parsley and salt.
  • Stir well and evenly coat each bread cube with the rest of the ingredients.
  • Fry for 3-4 minutes, until crispy on the outside.
  • Allow to cool before adding to the salad.

Assemble The Salad:

  • Chop the romaine lettuce and add to your favorite salad bowl.
  • Mix in the kale chips.
  • Top with Garlic Herb Croutons and parmesan cheese.
  • Drizzle your desired amount of Caesar Dressing over the salad and toss well.
  • Serve & Enjoy!
