Soup In Spring…

It’s Spring here, but the weather is cold, windy and stormy. Which only means one thing…comfort food time!

Comfort food isn’t always “unhealthy”. This soup is ultra-comforting and super nutritious. Plus, it’s unbelievably delicious. Honestly, I never understood why so many people were obsessed with cauliflower soup, until I tried this one. It is creamy, heavenly, easy to make and one of my family’s favourite soups.

Ingredients Needed…

Coconut Oil I prefer to use coconut oil with “curry-based” recipes, but you can substitute this for olive oil.
Garlic Fresh is best with this soup.
CauliflowerFrozen or fresh cauliflower works in this recipe.
Vegetable StockIf you eat meat, you can substitute this for chicken stock.
Coconut MilkAlways go full fat, never “light”, or it will be too thin.
Spices curry powder, cumin, ground coriander, ground ginger, turmeric and salt & pepper.

Ingredients

  • 2 tbsp coconut oil/ olive oil
  • 2 tsp garlic, minced
  • 1 small head cauliflower, chopped into florets (about 4 cups florets)
  • 500ml (2 cups) vegetable stock
  • 1 (400ml /14oz) can coconut milk
  • 2 tsp curry powder
  • 2 tsp cumin
  • 1 tsp ground coriander
  • ½ tsp ground ginger
  • ½ tsp turmeric
  • salt & pepper to taste

Instructions

  • Cut cauliflower into florets.
  • In a large saucepan, heat the oil over a medium-high 
heat and sauté the garlic and cauliflower for 2-3 minutes, stirring frequently.
  • Add the rest of the ingredients and stir well.
  • Reduce the heat to a low-medium, cover the 
saucepan with a lid, and simmer for 12-15 minutes.
  • Transfer to a blender and purée until smooth.
  • Season with salt and pepper.
  • Serve & Enjoy!
