EASY Keto Chocolate Cake (Low Carb | Gluten-Free | Sugar-Free)

There are hundreds of chocolate cake recipes out there, and it’s overwhelming trying to find the right one. So I have saved you the time, hassle and stress, and present to you my newest EASY chocolate cake recipe! Like a cake box mix, it’s dead easy to make… but tastes infinitely better!

What Makes It The Best…

  • The cake is made in one bowl which means there is less clean-up.
  • The frosting is also made in just one bowl perfect!
  • It takes less than 10 minutes to prepare the cake batter, about 5 minutes to make the chocolate frosting and the baking time is only 20 minutes (approximately!)
  • It can be made ahead of time – Allow the cakes to cool completely, wrap them in plastic wrap and place each layer in the freezer. They can be frozen for up to 6 weeks. If you freeze these chocolate cake layers, allow them to thaw completely in the refrigerator, before frosting them.

Tips & Tricks…

  • Grease the cake pans well – Don’t feel shy with greasing the cake pans with butter, it will make the baked cakes much easier to remove. And don’t forget to line the bottom of each cake pan with parchment paper.
  • Do not over-mix – This can be easy to do. Make sure you just mix the dry ingredients into the wet ingredients, until just combined (or it can end up dense).
  • Do not over-bake – I recommend checking this cake at the 20 minute mark. If an inserted toothpick comes out clean, you are good to go. If not, bake it for another couple of minutes, but don’t leave it unattended.
  • Use room temperature ingredients – This is crucial, but it’s especially important with the frosting ingredients, so it doesn’t end up lumpy!

Ingredients

Chocolate Cake:

  • 2 cups / 200g almond flour
  • 1/2 cup / 113g unsalted butter room temperature
  • 1/2 cup / 40g granulated sweetener (Erythritol/ Monkfruit)
  • 4 eggs room temperature
  • 1/2 cup / 40g unsweetened cocoa powder
  • 3 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Chocolate Frosting:

  • 1/2 cup / 113g unsalted butter room temperature
  • 1/4 cup / 113g cream cheese room temperature
  • 1/4 cup / 60ml heavy (double) cream room temperature
  • 1/4 cup / 20g unsweetened cocoa powder
  • 1/4 cup / 20g powdered sweetener (Erythritol / Swerve)
  • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 325ºF/ 160ºC. Line the bottom of 2 9" springform cake pans with parchment paper and grease the sides well with butter.
  • In a large bowl, beat together the granulated sweetener and butter together, until fluffy. Then beat in the eggs, one at a time, followed by the vanilla extract.
  • Gradually whisk in the almond flour, cocoa powder, baking powder and salt, until just combined.
  • Divide the batter between the prepared cake pans, and bake for 20-25 minutes, until an inserted toothpick comes out clean.
  • Let it cool completely before frosting.
  • Frosting – With an electric, handheld mixer, beat the cream cheese and butter together until combined and fluffy. Add the rest of the ingredients, and beat again, until soft and fluffy.
  • Place one layer of cake on a plate or cake stand. Frost the top with 1/3 of the frosting. Place the second layer on top of the frosted cake (upside down so the flat side is on top), and frost with the rest of the frosting.
  • Serve & Enjoy!
