Easy Tuna Melt Casserole (Keto | Low Carb | LCHF)

This delicious, easy tuna melt casserole requires very minimal ingredients, and will please the whole family!

Running Low…

When I can’t be bothered to go to the store (again!) and my cupboards and fridge are low on ingredients, I get creative. Sometimes my recipes work out, other times not so much. But, this Easy Tuna Melt Casserole recipe was a massive hit with my family, and I have since made it time and time again.

Minimal Ingredients…

This casserole is super easy to put together and only requires:

  • Cauliflower – This low carb ingredient is extremely versatile and can make any dish a meal. I love either oven-baking or air-frying cauliflower. However, I haven’t always had an air-fryer. Therefore, I went down the “oven-baked route”, purely for the purpose that anyone (and everyone) can make this dish at home.
  • Olive Oil or melted butter.
  • Cream CheeseAlways full-fat…never “reduced-fat”.
  • Canned Tuna – Always line-caught tuna, in either water or brine.
  • Cheese – I am a cheese-a-holic and always have tons of cheese on hand. For this casserole I went “classic tuna melt style” and decided to stick to a good, simple mature (sharp) cheddar cheese.
  • Dijon Mustard – This can be substituted for ¼ tsp mustard powder. Adding mustard in cheese-dishes really amplifies that “cheesy taste” and it is a real game-changer.
  • Salt & Pepperadjust o suit your taste buds.

  • 2 (142g/ 5oz) cans tuna, drained and broken up with a fork
  • 1 small head of cauliflower
  • 2 tbsp olive oil or melted butter
  • 113g (1 cup) mature (sharp) cheddar cheese, grated and divided
  • 112g (4oz) cream cheese
  • 1 tsp dijon mustard
  • ½ tsp salt
  • ¼ tsp black pepper


  • Preheat the oven to 200ºC/400ºF and line a baking tray with aluminum foil.
  • Cut the cauliflower into small florets and toss them in the olive oil or melted butter.
  • Lay the florets on the lined baking sheet, ensuring they don’t overlap too much. Sprinkle a pinch of salt over the top of them, and bake for 20 minutes, turning them over halfway through.
  • In a microwavable bowl, microwave the cream cheese, in 30-second intervals, until it is creamy.
  • Add in the tuna, dijon mustard, half of the cheese, salt and pepper, and mix really well.
  • Transfer the cauliflower to a small-medium casserole dish, and stir in the tuna-cheese mixture.
  • Top the whole thing with the remaining cheese and place in back in the oven for 10-15 minutes, until the cheese has melted.
  • Serve & Enjoy!
