Frosted Brownie Bites (Low Carb | Sugar-Free | Gluten-Free)

These low carb, rich and fudgy brownie bites are frosted in a chocolate buttercream, making them the ultimate keto snack for all chocoholics!

Married To A Chocoholic…

Yep, it’s true, I married the biggest chocoholic ever! My husband loves chocolate more than anyone I have ever met! He will happily eat chocolate all day, everyday (even in bed, just before he nods off to sleep!)

And one of his many weaknesses whenever we used to go grocery shopping, were those super sickly two-bite brownies. So, I made these yummy treats with him in mind, but completely sugar-free, gluten-free and extremely low carbso we can all enjoy them.

Talking about carbs…hold on to your seats ladies and gentlemen…these heavenly snacks only have 0.9g net carbs per brownie bite.

Yes, They are THAT Easy…

Brownies are one of easiest sweet treats to make, and the entire batter is only made in one bowl (easy clean up!)

Simply, melt the butter in the microwave. Next, add the rest of the ingredients (following the directions below) and bake! All brownie recipes stress the importance of not over-baking them, or the won’t result in that dreamy, soft and fudgy texture, that your hoping for. They need a maximum of 14 minutes, but I always start checking them around the 12 minute mark.

While the brownies are baking nicely in the oven, it’s a good time to make the chocolate buttercream. Simply, cream the butter (until smooth), then add the powdered sweetener and cocoa powder. Next, add the cream, a little at a time, until the frosting reaches your desired consistency.

Finally, evenly spread the frosting on top of each brownies, leave to set for several minutes…then HAPPILY INDULGE!

Add A Little Something Extra:

I love anything nutty, and find adding a handful of these Sugar-Free Candied Walnuts perfect in these brownies. However, more times than not, I get out-voted by my husband and kids, and make them with stevia-sweetened chocolate chips.

They can also be made super gooey by adding in a some Sugar-Free Chocolate Fudge Sauce (this recipe only takes 5 minutes!) or Easy Sugar-Free Salted Caramel Sauce.

Storing…

STORE these brownie bites at room temperature an air-tight container, for up to 3 days.

FREEZE them with a piece of parchment paper between each layer, to prevent them sticking together. They can be frozen for up to 3 months.

Ingredients

Brownie Bites:

  • 1/2 cup butter unsalted
  • 1/2 cup granulated sweetener (Monkfruit, Swerve or Erythritol)
  • 1/2 cup unsweetened cocoa powder
  • 2 eggs lightly beaten, (room temperature)
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup almond flour
  • Optional: 1/3 cup stevia-sweetened chocolate chips (see above for other add-ins)

Chocolate Buttercream Frosting:

  • 3 tbsp butter unsalted, (room temperature)
  • 1/2 cup powdered Swerve sweetener (plus a little extra for dusting)
  • 3 tbsp unsweetened cocoa powder
  • 4 tbsp heavy cream (room temperature)

Instructions

  • Preheat oven to 350ºF and a mini-muffin tin with cooking spray.

Brownie Bites:

  • In a large microwavable bowl, melt the butter (for about 30 seconds). Mix in the granulated sweetener, cocoa powder and salt, unit smooth.
  • Mix in the eggs and vanilla extract.
  • Gently mix in the almond flour, until just combined (don’t over-mix!) Fold in the chocolate chips (or any another add-in).
  • Scoop the brownie batter into each mini-muffin cavity and bake for 12-14 minutes.
  • Let them sit for 5 minutes, before transferring them to a wire rack to cool completely.

Chocolate Buttercream Frosting:

  • With a hand mixer, beat the butter until smooth (1-2 minutes).
  • Add the powdered sweetener and cocoa powder.
  • Add in the cream, one tablespoon at a time, until the frosting reaches your desired consistency (add a little more if necessary).
  • Spread the frosting on the brownie bites.
  • Dust with some powdered sweetener.
  • Enjoy!
