Goat Cheese & Cranberry Tartlets (Low Carb | Vegetarian)

These low-carb, keto, vegetarian, goat cheese and cranberry tartlets are one of the easiest appetizers to make! They are a wonderful addition to your holiday menu, as well as being perfect for using up any leftover cranberry sauce!

Festive Favorite…

Using up leftovers is one of my fun things to do in the kitchen! It’s perfect for me, because I cannot stand food waste and I love getting creative with food! So, a couple of weeks ago,  I made the BEST Sugar-Free Cranberry Sauce ever…which you guys HAVE to try! It was devoured extremely quickly, that I simply had no choice…I had to make it again!

Since, I made two batches in one week (that’s not too excessive, right?!) I had to come up with new recipes to incorporate it in. My cranberry sauce has the perfect balance of sweet and savory flavors, which makes it so versatile! The first leftover cranberry sauce recipe I made was my Cranberry White Chocolate Mousse, which was sweet, delicious, and addictive! Even though my family would have been very happy if I kept making this, I was desperate to experiment with it in some savory recipes!

Let’s Go Back In Time…

When I was growing up in England, it seemed that no matter whose Christmas party we rocked up to, they had a cranberry-type appetizer on the table! These appetizers were usually puff pastry bites filled with cranberry sauce and topped with Brie. Since, I have never been a Brie-lover, I used to scrape the cheese off the top of them and eat just the pastry and sauce together.

So, when I was thinking about what fun and festive appetizers I could create with my leftover cranberry sauce, I kept thinking of little tartlets topped with goat cheese. They worked out AMAZING, and I will DEFINITELY be making them again and again and again!

The Fabulous Cranberry Sauce…

If you skipped over my first part of the blog (no – I won’t judge you…much) then let me tell you guys that my Perfect Sugar-Free Cranberry Sauce is the VERY BEST!

It only takes 20 minutes to make and only requires a handful of ingredients (most of which are in your kitchen cupboard):

  • 12 oz fresh cranberries
  • 1/2 cup water
  • 1/2 cup golden granular sweetener (I like using Monkfruit or Swerve)
  • 1/3 cup white granular sweetener (I like using Monkfruit or Swerve)
  • 2 tsp orange zest
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt

Vegetarian Options Are A Must….

With every party, gathering, social event etc. there always has to be a vegetarian option available for your guests. I love making making keto-friendly holiday appetizers, but making them suitable for vegetarians is something I struggle with. The funny thing about this, is that I used to be a vegetarian, so it really shouldn’t be as hard for me as it actually is! Even though creating recipes that are both vegetarian AND keto is a little more challenging…I love a good challenge! I will definitely be experimenting and creating a lot more vegetarian and vegan keto recipes in the future…so stay tuned folks!

Ingredients

Crust:

  • 3 tbsp unsalted butter melted
  • 1 1/2 cups almond flour
  • 1 egg yolk
  • 1/2 tsp salt

Filling:

  • 3/4 cup (12 tbsp) Sugar-Free Cranberry Sauce

Topping:

  • 4 oz soft goat cheese crumbled

Instructions

  • Preheat the oven to 350ºF and grease a 12-count muffin tin.
  • In a microwave safe bowl, melt the butter (about 30-45 seconds).
  • Add the almond flour, salt and egg yolk and mix together.
  • Evenly press the pastry mixture in each muffin cup.
  • Place in the oven for 10 minutes, until very lightly brown. Take it out the oven, set aside, and allow to cool for 10 minutes.
  • Spoon 1 tbsp of cranberry sauce in each pastry cup and evenly top with the crumbled goat cheese.
  • Return the pan back to the oven and cook for 15-20 minutes, until cheese has melted slightly and the crust is golden brown.
  • Allow these tartlets to cool in the pan for 5 minutes before serving.

Notes

Enjoy these delicious tartlets warm or cold!
