Keto Sweet Pepper Poppers
Step aside jalapeño poppers…there’s a new popper in town (that’s kid-friendly!) These delicious, keto sweet pepper poppers only require 5 ingredients and are ready in under 30 minutes! They are perfect as a holiday appetizer, party food, side dish or snack!
Introducing The New Popper….
A couple of weeks ago I made some classic, keto-friendly jalapeno poppers. They were so good! However, my kids felt like they were missing out (so we had to pretend they were not as delicious as they were). Therefore, I had a new mission, which was to make pepper poppers that my whole family can enjoy! These mini sweet peppers with a cream cheese, bacon and cheddar cheese filling are just that…they are perfect for EVERYONE!
I love this super easy recipe. These delicious poppers are great for parties, family gatherings, side dish or snack… but, be careful… because once you start popping them in your mouth, it’s hard to stop!
How To Make The Perfect Pepper Poppers…
Prepare the peppers – Simply rinse and slice the sweet peppers in half lengthways, scoop out the seeds and lay them a lined baking sheet.
Make the filling – This is my kind of filling! Combine the softened cream cheese. Ok, lets take a second for me to emphasize the word “softened”. It is so important to have your cream cheese at room temperature or softened slightly, otherwise your filling will not turn out perfectly smooth and creamy. If you have forgotten to take the cream cheese out the fridge (like myself on several occasions), then do not panic. You can easily soften cream cheese by putting it in a microwavable-safe bowl and zapping it for 20-30 seconds, and mixing it until smooth. Once your cream cheese is creamy. mix in the cheddar cheese, bacon (cooked then chopped up into small pieces) and paprika, until well combined.
Stuff ’em – The easiest way I have found stuffing mini peppers is by using my fingers. I tried fiddling around with spoons before, but it’s just not worth it. Using your fingers takes infinitely less time AND it is much more precise!
Time to bake – Now it’s time to bake these pepper poppers. They only need 20 minutes in the oven at 375ºF to become one of your favorite recipes to share at your upcoming parties!
Serve – Even though these pepper poppers are good cold, they are way better hot! Therefore, once they come out of the oven, immediately transfer them to your favorite platter/plate and serve them straight away! YUM!
Keto Sweet Pepper Poppers
- 10 mini sweet peppers
- 8 oz cream cheese softened
- 6 slices bacon cooked and chopped
- 1/2 cup cheddar cheese grated
- 1/4 tsp paprika
- Preheat the oven to 375ºF and line a baking sheet with foil or a silicone baking mat.
- Slice the mini sweet peppers in half lengthways and discard the seeds.
- In a medium-sized mixing bowl, mix the cream cheese, until smooth and creamy.
- Add the bacon, cheddar cheese and paprika, and mix well.
- Fill each half of the mini peppers with the cheesy-bacon filling.
- Place the stuffed peppers on a lined baking sheet and bake for 20 minutes, or until the filling has melted and the top is slightly crispy.
- Serve & Enjoy!
