Low Carb Roasted Tomato Marinara Sauce

This classic, roasted tomato marinara sauce is simple, quick and easy to make! It is low carb, requires minimal ingredients and is perfect for all your Italian recipes!

Again & Again & Again…

I cannot even begin to tell you guys how many times I have made this marinara sauce…and it turns out perfect every time! You really can’t go wrong with pureeing roasted tomatoes, olive oil and herbs together. It is classic, rich and perfect for my Zoodle Bolognese Bake, Chicken Parmesan Meatball Skillet and as a dip for these yummy Low Carb Garlic Dough Balls.

Never Go Without…

When our local store has a sale on their Organic Roma Tomatoes or Campari tomatoes, I go a little crazy…ok, maybe a lot crazy. I buy an obscene amount of them (and look like a mad tomato lady), so I can make lots of batches of this Roasted Tomato Marinara Sauce. I don’t like running low on sauce, because there are so many wonderful recipes I can make with it. So I usually store at least one batch in the refrigerator for 4-5 days and I freeze the rest for up to 2 months.

Easy, Simple, Delightful…

This sauce is seriously easy to make! Simply score the tomatoes, by using a knife to make an “X” on the bottom of them (so the skin can be easily removed after they have cooled down). Roast them on a lined baking sheet for 20 minutes at 400ºF. Allow them to cool down (don’t skip this step…it’s not worth burning your fingers for the difference of a few minutes), then peel the skin off. Finally, coarsely chop and purée them in a food processor along with the tomato paste, olive oil, basil, onion powder, garlic powder, salt and pepper.

And that, my friends, is it. It really is this simple (and delicious!)

Ingredients

  • 6-8 medium Roma or Campari tomatoes
  • 3 tbsp tomato paste
  • 2 tbsp olive oil
  • 1 tbsp dried basil
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Preheat the oven to 400ºF and line a baking sheet with aluminum foil or a silicone baking sheet.
  • Score the bottom of the tomatoes (see above for details), and place on the baking sheet with a sprinkle of salt. Bake for 20 minutes.
  • Take them out the oven and let them sit for 5-10 minutes to cool down.
  • Peel the skin off the tomatoes and coarsely chop them up. Then add them to a food processor, along with the tomato paste, olive oil, basil, onion powder, garlic powder, salt and pepper. Purée until smooth.
  • Serve & Enjoy!
