Marshmallows (Zero Carb | Sugar-Free | Keto)

Homemade, sugar-free, keto, marshmallows has never tasted so deliciously guilt-free! These fluffy wonders are easy to make and have 0g net carbs per serving!

Oh So Many Times…

I have made these marshmallows SO many times. They are ridiculously easy to make and only require 5 simple ingredients:

  • GelatinUse good-quality, grass-fed gelatin.
  • Xylitol – I used to make these with allulose, but that sweetener is extremely difficult to find in the UK. Therefore, I switched sweetener and now make them with Xylitol. if you want to use allulose instead, reduce the amount to 50g (1/2 cup) (as it’s a lot sweeter).
  • Powdered Sweetener – Either Swerve or Erythritol work with this recipe, but it needs to be powdered.
  • Salt – just a wee pinch goes a long way.
  • Water 
  • optional: vanilla extract– This can be substituted for peppermint extract, lemon extract or any flavoured extract you are fancying.

Beat, Beat, Beat…

Yes, this recipe is easy…however, it takes a lot of beating. I use my standing mixer (as it saves my arms) and I highly suggest you do the same. But, if you don’t have one, using an electric hand-mixer will work, just be prepared to switch your hands over during the beating process, since they will get very tired. To get those super fluffy marshmallows, they need to be beaten for roughly 12-15 minutes.

Timings…

Two things to note about this recipe.

  1. Work Quickly – After the marshmallow mixture is beaten and made, quickly transfer it to your lined 8×8″ baking tin or silicone ice cube trays, as it gets sticky and hard to spread within minutes.
  2. Waiting Time – Leave them uncovered, for at least 8 hours (but preferably overnight). I make these marshmallows in the evening, so the following morning we can add some to our hot chocolates with breakfast. Yum!

Chocolate Covered…

Cover them in melted stevia-sweetened chocolate chips or dip them in Chocolate Fudge Sauce for a super delicious treat!

Ingredients

  • 1 (12g) sachet gelatin (equivalent to 1 1/4 tbsp)
  • 118ml (1/2 cup) water divided
  • 75g (3/4cup) xylitol
  • 40g (1/4 cup) powdered erythritol or Swerve
  • 1/4 tsp salt
  • optional: 1/2 tsp vanilla extract (or your favourite flavour extract)

Instructions

  • Line two 8×8” square baking pans with greaseproof (parchment) paper.
  • In standing mixer or large bowl, dissolve the gelatin in half the water (59ml /1/4 cup).
  • In a saucepan, over a low-medium heat, dissolve the xylitol, and the powdered erythritol in the remaining 59ml (1/4 cup) of water.
  • Once it starts to form a couple of bubbles on top, take it off the heat.
  • With the motor running on a low speed, transfer the sugar syrup into the bloomed gelatin. Add the vanilla extract (or favourite flavored extract, if using) and salt.
  • Increase the speed to a high, and beat the marshmallow mixture for 12-15 minutes, until its fluffy and has at least doubled in size.
  • Working quickly, transfer it into the lined 8×8” pans.
  • Leave the marshmallows uncovered to dry out for at least 8 hours (or preferably overnight!)
  • Cut into squares with a sharp knife.
  • Serve & Enjoy!
