Mexican Cauliflower Rice (Dairy-Free | Paleo | Low Carb)

This simple, keto, low carb mexican cauliflower rice is easy to make and ready in 10 minutes. It is the perfect side dish to accompany fajitas, burrito bowls, taco salads and more!

Cauliflower Rice Obsession…

What is not to love about Mexican Cauliflower Rice? It is a great side dish to accompany any Mexican dish and it is incredibly quick to make!

If you’ve read some of my other blog posts, then you might already know that I love developing recipes with cauliflower rice. Even though, I wasn’t the biggest fan of cauliflower rice before going keto, I now adore the stuff (as long as it is made with the right spices and seasonings!) PLUS, it only has around 5g of carbohydrates per cup, which is drastically less than real rice, which has 53g per cup.

How To Make Cauliflower Rice…

Cauliflower Rice may seem a little daunting to make from scratch, but let me assure you…it’s easy-peasy. There are a few methods of making your own cauliflower rice, and these two are my preferences.

  1. Food Processor – This is the easiest method. Simply chop your head of  cauliflower into florets and place them in the food processor. Pulse several times (about 4-5 times) until it resembles rice. You can also do this with frozen cauliflower florets.
  2. Box Grater – You don’t have to chop your cauliflower into florets in this method. However, grating a head of cauliflower is a lot more time consuming.

Storing & Freezing…

  • Fridge – Keep this rice covered and refrigerated for up to 4 days.
  • Freeze – If you want to freeze it for a later date, simply make it following the directions below, then allow it cool down completely before transferring it to an air tight container and freezing it. Frozen mecican rice will last in the freezer for 4-6 weeks. When you are ready to eat it, thaw it completely and heat it in a saucepan or microwave, until warmed through.

Ingredients

  • tbsp coconut oil
  • 1 tsp garlic, minced
  • 300g (3 cups) cauliflower rice
  • 60ml (¼ cup) chicken or vegetable stock
  • 2 medium tomatoes, chopped
  • 1 tsp paprika
  • 1 tsp chili powder
  • ½ tsp dried oregano
  • 4g (¼ cup) fresh coriander (cilantro), chopped, plus a little extra for garnishing.
  • ½ tsp salt
  • squeeze of lime juice

Instructions

  • Heat coconut oil in large skillet over a medium heat. Once hot, sauté the garlic for 45 seconds-1 minute, stirring frequently.
  • Add in the cauliflower rice and cook for 4 minutes, stirring frequently.
  • Add in the chicken stock, tomatoes, paprika, chili powder, chopped coriander (cilantro), salt and lime juice.
  • Cook and stir frequently, for a further 3-4 minutes, until all the ingredients are well combined and the liquid has evaporated.
  • Transfer the rice to a serving dish and garnish with a little extra fresh coriander (cilantro) and a some lime wedges.
  • Serve & Enjoy!
