This delicious, mushroom fried cauliflower rice is low carb, keto, vegan, gluten-free, paleo and whole30 approved! It is straightforward to make and ready in 15 minutes!

Mushrooms For Days…

My youngest daughter is OBSESSED with mushrooms! Her favorite soup, pie and main dishes all involve mushrooms! So, when I went food-shopping with her last week, she was adamant on buying a crazy amount mushrooms, and I simply couldn’t say no to her because:

  1. She’s sooo damn cute and
  2. My 2-year old is insisting on vegetables, and I ALWAYS have to encourage this!

So, I ended up with about 4lbs of mushrooms! Then, came the fun part (for me that is) which was creating starters, appetizers, sides and main dishes with this fabulous ingredient!

I decided on Mushroom Fried Cauliflower Rice to pair with a classic, stir-fry for dinner (similar to this Chicken & Cabbage Stir-Fry but with mushrooms instead of cabbage!)…and everyone DEVOURED both dishes!

What You Need…

  • Sesame Oil – I love using sesame oil! It brings out all those wonderful flavors in most Asian recipes, including Thai Tuna Burgers with Asian Slaw.
  • Cauliflower Rice – My love for cauliflower rice has come a long way! Even though, I wasn’t on board with it about a year ago, I now eat in every couple of weeks! I buy it it bulk, and if you do the same, just note it takes a good 3-4 minutes longer to cook than fresh cauliflower rice.
  • Mushrooms – Mushrooms are low in carbs, which makes them a great vegetable to include in keto cooking. They only have 2.3g net carbs in a 100g serving!
  • Eggs – Added protein, flavor and texture!
  • Coconut aminos – Coconut aminos are sugar-, wheat- and gluten-free, which makes them a perfect keto substitution for soy sauce.
  • Onion, garlic, ginger salt and pepper– All these ingredients add extra flavor and make this side dish wonderful!

Ingredients

  • 1 tbsp sesame oil
  • 4 cups cauliflower rice
  • 1/2 onion chopped
  • 1 tsp garlic minced
  • 1 cup mushrooms chopped
  • 3 eggs beaten
  • 2 green onions (scallions) chopped
  • 2 tbsp coconut aminos
  • 1/2 tsp ginger
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Heat sesame oil in a wok or a large frying pan. 
  • Add the onion and garlic and cook for 1-2 minutes, until the onion starts to become translucent. 
  • Add the mushrooms and continue to stir and cook for another 2 minutes,.
  • Add the cauliflower rice and cook for 4-5 minutes, stirring well.
  • Push the cauliflower rice to the side, and pour the beaten egg into the space in the pan. Scramble the eggs, then incorporate into the cauliflower rice mixture. 
  • Whilst continually stirring, add the coconut aminos, ginger, salt and pepper, until well combined and evenly distributed.
  • Serve & Enjoy!

Notes

Optional: Top with some finely chopped green onions (scallions!)
