This pine nut and mint cauliflower rice is a perfect side to go with pretty much any main dish. It’s low carb, vegan, paleo, whole30 compliant, and is made in less than 15 minutes!

Not Another Cauliflower Rice Dish…

Why actually, yes…here is another cauliflower rice dish for you all.

I am fully aware of my obsession with cauliflower rice. I cook it several times a week, because it makes the easiest side dish to most meals, and just a great quick fix (usually with lots of cheese!)

This particular side dish came about when I making my Aubergine (Eggplant) Stew with Feta the other night. I didn’t want to cook my go-to cauliflower rice side (which is my 3-Ingredient Garlic Cauliflower Rice). So, I looked at what ingredients I had in my house and decided to add some pine nuts and fresh mint to it. And, wow – it was delicious! The pine nuts give this dish a slightly “nutty” flavor (and a nice crunch) which works perfectly with the fresh flavor of mint.

How To Make Cauliflower Rice…

I’m lazy, so I usually buy pre-packaged cauliflower rice. However, there are times I do make my own. My preferred way is to grate a head of cauliflower with a box grater. I don’t know why, but for me, this way always results in the best looking rice. Another way (which is fairly popular) is to make it in a food processor. Simply cut up a cauliflower head into florets, and pulsing it several times, until it resembles rice.

Are Pine Nuts Keto?

The truth is pine nuts can be eaten whilst on the keto diet, but they should be eaten in moderation. They are considered quite high in carbs, as they have about 8g net carbs per 100g serving, but they are a great source of fat and protein. So, small amounts of these nuts, is absolutely fine.

Make-Ahead and Store…

This side dish can be made ahead of time and stored in the refrigerator for up to 4 days. It’s great for meal prep, as it only needs to be reheated in the microwave, until warmed through.

Ingredients

  • 23g (1/4 cup) pine nuts
  • 430g (4 cups) cauliflower rice
  • 60ml (1/4 cup) vegetable stock
  • 3 tbsp fresh mint chopped
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • In a small, dry, frying pan, toast the pine nuts for 2-3 minutes, tossing frequently, until golden brown. Set aside.
  • In a large frying pan, add the cauliflower rice and stock and cook for 5-7 minutes, stirring frequently, until the liquid has evaporated.
  • Stir in the mint leaves, oregano, garlic powder, salt and pepper, and continue to cook for 1 minute.
  • Take off the heat and stir in the pine nuts.
  • Serve & Enjoy!
