Pizza Time…

If you have read my Easy 5-minute Pizza Sauce recipe, then you know this Roasted Chicken & Red Pepper Pizza was a massive hit in our house!

Fathead Pizza Dough…

Fathead dough is fabulous for Garlic Dough Balls, pizza crust and more! All fathead dough recipes have these essential ingredients:

  • Mozzarella cheese & Cream cheese – These ingredients melt together perfectly to help mimic bread.
  • Almond flour – This is the best low carb flour alternative for this recipe. I have tried it with coconut flour, but definitely prefer the almond flour!
  • Egg – An egg helps bind all the ingredients together.

Easiest Pizza Sauce…

This EASY 5-MINUTE PIZZA SAUCE is one of the quickest and easiest recipes that I have ever made!

All you need to do is mix all the ingredients together in a bowl. That’s it! Simple!

The ingredients you need are:

  • Tomato paste (6oz can)
  • Olive oil (1 tbsp)
  • Water (1/4-1/3 cup)
  • Basil, dried (2 tsp)
  • Oregano, dried (1 tsp)
  • Garlic powder (1 tsp
  • Onion powder (1 tsp)
  • Salt (3/4 tsp)
  • Back pepper (1/2 tsp)

Alternative Toppings…

I love the combination of roasted chicken and roasted red pepper. However, you can add any of your favorite meats and vegetables to it.

Freezer Friendly…

This pizza dough and pizza sauce can both be frozen for up to 3 months!

For the Pizza Dough, follow the instructions below, but stop after direction #4. After you take the crust out the oven (before adding the sauce and toppings), allow it cool down completely. Once cooled down, wrap it in cling film and freeze it, until desired!

Note: This crust does not have to be thawed! Just take the pizza dough out of the freezer, unwrap it, spread the EASY 5-MINUTE PIZZA SAUCE and desired topping on it, and bake it at 400°F for 20 minutes.

Ingredients

Pizza Crust:

  • 1 1/2 cups mozzarella cheese shredded
  • 3 oz cream cheese
  • 1 cup almond flour
  • 1 egg beaten
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt

Pizza Sauce:

  • 1/2 cup Easy 5-minute Pizza Sauce

Toppings:

  • 1 cup mozzarella cheese shredded
  • 1-2 chicken breasts
  • 1/2 red pepper sliced
  • 1 tbsp olive oil
  • 1/2 tsp salt

Instructions

  • Preheat oven to 400°F.
  • Place chicken (either 1 large or 2 small chicken breasts) and red pepper in a baking dish and drizzle with olive oil and salt. Bake for 20-25 minutes, until the chicken is cooked through and red pepper is perfectly roasted. Once they’re cooked, cut chicken and red pepper into cubes
  • While the chicken and red peppers are cooking, make the pizza crust by melting the mozzarella and cream cheese together in a microwavable safe bowl, for approximately 1 minute. Mix in the dry ingredients and beaten egg. Mix until smooth and well combined.
  • With dampened hands, spread the pizza dough on a lined baking sheet and flatten to 1/2” thick. Bake for 10 minutes.
  • Take it out the oven and spread the pizza sauce evenly on op of the crust. Sprinkle with 1 cup mozzarella cheese and evenly scatter the chicken and roasted red peppers on top.
  • Return pizza bake to the oven for 10 minutes, until cheese has melted and is slightly bubbly on top.
  • Let it cool for 2-3 minutes on baking sheet before transferring to a chopping board.
  • Slice, serve & enjoy!
