Pizza Pizza Pizza…

Ok, so I just wrote and published a post about my Easy 5-minute Pizza Sauce recipe. If you’ve read it then I apologize for repeating myself, but if you haven’t had the chance to read it yet, let me give you a quick summary.

My eldest daughter has never really liked pizza. It was a little bizarre that she would eat pretty much everything, apart from pizza (and pasta!) That was, until last week, after she helped devour this roasted chicken and red pepper pizza!

Fathead Pizza Dough…

Fathead dough is not only perfect for my Garlic Dough Balls but it works amazingly as a pizza crust. All fathead dough recipes have pretty much the same ingredients, but use different quantities. My fathead dough requires:

  • Mozzarella cheese
  • Cream cheese
  • Almond flour
  • Egg
  • Onion powder
  • Garlic powder and
  • Salt

Toppings…

So for this yummy recipe, I use roasted chicken breasts and roasted red pepper. However, you can add your favorite meats and vegetables to it, to make it your own! Other family favorite combinations include:

  • Pepperoni & Olives
  • Ham & Mushroom
  • Sausage & Bacon
  • Tomato & Meatball

Freezer Friendly…

This pizza crust and pizza sauce can both be frozen, so you have an easy, quick dinner in the near future.

This Easy 5-minute Pizza Sauce and pizza dough, can be frozen for up to 3 months. Make the pizza dough following the instructions below, but after you take it out the oven (before you add the sauce and toppings) allow it cool down completely before wrapping it up and freezing it.

Even though you have to thaw the pizza sauce completely before spreading it the pizza crust, you don’t have to thaw the pizza crust. Just take the pizza dough out of the freezer, unwrap it, spread sauce and toppings on it and bake it at 400°F for 20 minutes.

Ingredients

Pizza Crust:

  • 1 1/2 cups mozzarella cheese shredded
  • 3 oz cream cheese
  • 1 cup almond flour
  • 1 egg beaten
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt

Pizza Sauce:

  • 1/2 cup Easy 5-minute Pizza Sauce

Toppings:

  • 1 cup mozzarella cheese shredded
  • 1-2 chicken breasts
  • 1/2 red pepper sliced
  • 1 tbsp olive oil
  • 1/2 tsp salt

Instructions

  • Preheat oven to 400°F.
  • Place chicken (either 1 large or 2 small chicken breasts) and red pepper in a baking dish and drizzle with olive oil and salt. Bake for 20-25 minutes, until the chicken is cooked through and red pepper is perfectly roasted. Once they’re cooked, cut chicken and red pepper into cubes
  • While the chicken and red peppers are cooking, make the pizza crust by melting the mozzarella and cream cheese together in a microwavable safe bowl, for approximately 1 minute. Mix in the dry ingredients and beaten egg. Mix until smooth and well combined.
  • With dampened hands, spread the pizza dough on a lined baking sheet and flatten to 1/2” thick. Bake for 10 minutes.
  • Take it out the oven and spread the pizza sauce evenly on op of the crust. Sprinkle with 1 cup mozzarella cheese and evenly scatter the chicken and roasted red peppers on top.
  • Return pizza bake to the oven for 10 minutes, until cheese has melted and is slightly bubbly on top.
  • Let it cool for 2-3 minutes on baking sheet before transferring to a chopping board.
  • Slice, serve & enjoy!
