One of my family’s favorite side dishes to any roast dinner is stuffing. Stuffing is usually bread based, but let me assure you guys that you will not miss the bread in these stuffing balls! These low carb balls of deliciousness are made with classic stuffing ingredients including celery, onion, sausage, sage and cranberries.

Effortless…

Who doesn’t appreciate a ridiculously EASY recipe? This recipe basically tells you to throw all your ingredients into a bowl, mix them together and bake these stuffing balls for 30 minutes. Perfect!

Ingredients

  • 1 lb ground sausage
  • 1/2 cup almond flour
  • 1/2 cup celery finely chopped
  • 1/3 cup fresh cranberries chopped
  • 1/4 onion chopped finely
  • 1 egg
  • 1 tsp oregano dried
  • 1 tsp sage dried
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp baking powder
  • 1/2 tsp black pepper

Instructions

  • Preheat oven to 350ºF and line a baking sheet with foil or a silicone baking sheet.
  • In a medium sized bowl, mix all the ingredients together, until they are well combined.
  • Using your hands or a small cookie scoop, form 18 balls.
  • Place each meatball on the lined baking sheet, spacing them at least 1/2” apart. Bake for 30 minutes, turning over halfway through.
  • Serve & Enjoy!
