I used to eat fajitas on a very frequent basis. It was one of my go-to meals back in my college days. They are easy, delicious and simple to make. That being said, I now make them even easier, by popping the whole lot into the oven (after marinating quickly). This cooking method means that dinner is ready with almost no effort at all.

Ingredients

  • 3 large chicken breasts, thinly sliced
  • ½ small onion, thinly sliced
  • 2 cups mixed bell peppers, thinly sliced
  • 2 tbsp (30 ml) avocado oil
  • 2 tsp chili powder
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • salt and black pepper, to taste

Instructions

  • Preheat the oven to 200ºC/400ºF and line a baking tray with aluminum foil.
  • In a mixing bowl, combine all the ingredients together, making sure the chicken and peppers are evenly coated with all the spices.
  • Transfer the mixture onto the lined baking tray, and spread them out slightly, so they don’t overlap.
  • Bake for 20-25 minutes, turning over halfway through, until the chicken is cooked through.
  • Serve & Enjoy!
