This morning, my eldest daughter insisted on these Perfect Blender Waffles for breakfast. Even though I told her that I wasn’t in the mood to cook anything, she kept pleading and eventually started chanting “waffles!” Next thing I knew, my youngest daughter got involved and that was it. Before 6 o’clock in the morning, I had two kids demanding waffles for breakfast…and I had no other choice than to give in to the peer pressure (secretly, I started to want them too!) So, I made these Waffles with this superb simple strawberry syrup on top, and it was the absolute perfect start to my day, and resulted in two very happy and satisfied kiddos!

Double, Triple, Quadruple…

This recipe is as easy to make as my Sugar-Free Strawberry Jam. When the ingredient list is SO minimal, then it is dead easy to double, triple or quadruple the recipe! If you make an abundance of strawberry syrup (which I strongly encourage), then you will be happy to note that, it can be frozen for another day!

If you go down the freezing route, follow the directions on the recipe until you reach the end of instruction #4. Once it has finished cooking in the saucepan, pour the syrup into an ice cube tray(s), let it to cool down completely before transferring it into the freezer. It can last for up to 2 months in the freezer.

Ingredients

  • 1 cup strawberries sliced
  • 1 cup water
  • 1/4 cup Confectioner's Swerve (or your favorite powdered sweetener)
  • 1/4 tsp lemon juice
  • 1/4 tsp xanthan gum

Instructions

  • Purée strawberries in a small food processor or NutriBullet.
  • Pour puréed strawberries in a medium sized saucepan with the powdered sweetener, lemon juice and xanthan gum.
  • Bring to a boil, then reduce the heat to a low-medium and simmer for 5-8 minutes, until the syrup has thickened to your desired consistency.
  • Pour this strawberry syrup through a fine mesh sieve into an air-tight container. Allow it cool down for a few minutes.
  • Serve and ENJOY!

Notes

Cover the air-tight container and store in the refrigerator for up to 1 week.
