Sickness Bug Attack..

This week has been rough!

My husband, myself and both our kids were hit hard with the flu! The only thing we could really do was sleep. We couldn’t stomach anything. Even watching tv made us nauseous at times. It was the worst sickness bug we have ever had! I don’t know if it was a good thing or a bad thing that we all got it at exactly the same time. However, we made it throughjust!

Around the day 3 mark, we all started to get our appetites back (thankfully!), and I knew we all needed something sufficient in our bodies (especially after what they had all just gone through). Since I was still feeling pretty weak, I was unable to spend any quantity of time in the kitchen, so I had to make something fast, easy and nutritious. This slow cooker pulled pork chili, ended up being exactly what we all needed, and it was so yummy that I will definitely be making it again and again!

Talk About An Easy Meal…

Yes, it’s definitely easier to have the pulled pork already shredded and ready to go. Luckily, I bought a huge pork shoulder last week, which went straight into my slow cooker. I had so much leftover, that I froze half of it, and it inevitably ended up being perfect for this recipe!

Side Note: If you have any frozen meat, always let it defrost on the side before cooking with it!

This recipe is one of the easiest chili recipes ever…and one of the tastiest! Simply, fry up the veg, then chuck all the ingredients in the slow cooker (crock pot) and let it do it’s thing!

Ingredients

  • 4 cups pulled pork
  • 1 tbsp olive oil
  • 1 small onion diced
  • 1 yellow pepper diced
  • 1 tsp garlic minced
  • 2 cups chicken stock
  • 1 14.5oz can chopped tomatoes
  • 3 tbsp chili powder
  • 2 tbsp paprika
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  • In a frying pan, over a medium-high heat, heat the oil and sauté the onion, pepper and garlic for 3-4 minutes, until softened. Transfer to a slow cooker, along with rest of the ingredients.
  • Stir well, until everything is well combined.
  • Cover and cook on a high for 1 hour.
  • Serve & Enjoy!
