Egg muffins are one of the most popular in the “keto world”, because they are: low in carbs, high in protein, extremely easy to make and very versatile.

I make different versions of egg muffins about once a week, and last week I decided to make them with some turkey mince (ground turkey). The recipe is so simple and straightforward, and the muffins turned out so delicious, that I decided this was my next recipe to upload for you all.

Serve With Anything…

Another thing I love about these muffins (well most egg muffins to be honest) is they can be served cold, warm or hot.

As well as you can eat them with breakfast, lunch, dinner or as a snack.

So, What’s In Them?

The ingredients you will need are:

  • Olive Oil This can be substituted for avocado oil or butter.
  • Turkey mince (ground turkey)Or any ground meat of your preference.
  • Spices dried parsley, garlic powder and salt.
  • Eggs always opt for free range if possible.
  • Double cream (heavy cream) Substitute for your preferred unsweetened nut milk of your choice.
  • Cheddar cheeseStrong (mature) cheese is my favourite cheese for these egg muffins, but feel free to experiment with different cheeses.

Ingredients

  • 1 tbsp olive oil
  • 250g (½ lb) turkey mince (ground turkey)
  • 2 tsp dried parsley
  • 1 tsp garlic powder
  • ½ tsp salt
  • 6 large eggs
  • 80ml (⅓ cup) double cream (heavy cream)
  • 150g (1½ cups) cheddar cheese, grated

Instructions

  • Preheat the oven to 190ºC/375ºF and spray a 12-count muffin tin with cooking spray.
  • Heat the olive oil In a skillet, over a medium-high heat. Add the turkey mince, parsley, garlic powder and salt. Use a spatula to break up the turkey, and continue to cook until no longer pink. Set aside to cool down.
  • In a mixing bowl, whisk the eggs and cream together. Add the cheese, then the cooled down meat.
  • Evenly distribute the egg mixture into each muffin cups and bake for 18-20 minutes.
  • Allow to cool for 2-3 minutes. Then, run a butter knife around the edges of the muffin cups, and carefully pop them out.
  • Serve & Enjoy!
