Goat Cheese & Cranberry Tartlets (Low Carb | Vegetarian)

These low-carb, keto, vegetarian, goat cheese and cranberry tartlets are one of the easiest appetizers to make! They are a wonderful addition to your holiday menu, as well as being perfect for using up any leftover cranberry sauce!

Ingredients

Crust:

  • 3 tbsp unsalted butter melted
  • 1 1/2 cups almond flour
  • 1 egg yolk
  • 1/2 tsp salt

Filling:

  • 3/4 cup (12 tbsp) Sugar-Free Cranberry Sauce

Topping:

  • 4 oz soft goat cheese crumbled

Instructions

  • Preheat the oven to 350ºF and grease a 12-count muffin tin.
  • In a microwave safe bowl, melt the butter (about 30-45 seconds).
  • Add the almond flour, salt and egg yolk and mix together.
  • Evenly press the pastry mixture in each muffin cup.
  • Place in the oven for 10 minutes, until very lightly brown. Take it out the oven, set aside, and allow to cool for 10 minutes.
  • Spoon 1 tbsp of cranberry sauce in each pastry cup and evenly top with the crumbled goat cheese.
  • Return the pan back to the oven and cook for 15-20 minutes, until cheese has melted slightly and the crust is golden brown.
  • Allow these tartlets to cool in the pan for 5 minutes before serving.
